 Easy Cucumber Kanji Recipe (By Dietician Gauri Anand)

Ingredients:

  • 2 medium cucumbers (peeled and cut into 1-inch pieces)

  • 4 cups of boiled and cooled water

  • 2 tbsp yellow mustard powder

  • 1 tsp red chilli powder (adjust to taste)

  • ½ tsp black salt (kala namak)

  • ¼ tsp asafoetida (hing) – optional

  • Salt to taste

Preparation Instructions

  1. Peel and chop the cucumbers into bite-sized chunks.

  2. In a sterilized glass or ceramic jar, combine mustard powder, red chilli, black salt, hing (if using), and regular salt.

  3. Add the boiled and cooled water to this spice mix and stir until everything is well dissolved.

  4. Drop in the cucumber pieces and stir gently.

  5. Cover the jar with a muslin cloth or loose-fitting lid (to allow gases to escape during fermentation).

  6. Place the jar in a warm, sunny spot for 2–4 days.

  7. Stir once or twice daily.

  8. Once the drink turns slightly sour and the cucumber softens, it's ready.

  9. Store in the refrigerator and serve chilled.

  10. Garnish with fresh coriander if desired.
